Necessary products:

1 leek (3-4 pieces are enough, a total of 100-120 grams, preferably only the white part)

1 onion

1 carrot

3 tablespoons rice

4-5 tablespoons olive oil

2-3 ripe tomatoes

parsley

lemon

ground black pepper

Method of preparation:

Peel a leek, cut it into thin strips and fry it until soft in very hot olive oil. Add the carrots, which you cut into thin circles. Season with salt and pepper. Pour boiling water over the vegetables and stew under a lid for 5 minutes.

Fry onions and carrots. Remove the skin from the tomatoes and cut them into pieces (large or small does not matter). If ripe enough, they will turn into tomato sauce during cooking. Otherwise, you can add 1 tbsp tomato paste or half a glass of tomato juice. Fry them. Cut the leeks lengthwise in the middle. Stew for 10 minutes, add water if necessary. Put it with the other vegetables. Then cover everything with rice, stir, add water and simmer under a lid over medium heat until the rice is ready.

A few minutes before the dish is ready, season with lemon juice (1 tbsp.), And you can replace it with dry white wine.

Place on a plate and sprinkle with chopped parsley. Serve very hot.
