How To Cook Rice With Pesto, Roasted Vegetables, Chickpeas And Halloumi Cheese - Recipe

Prepare a vegetarian dinner of boiled brown rice with roasted vegetables and parsley pesto, garnished with pieces of tender and tender Italian halloumi cheese with a crispy crust.

Required products :

  • 2 red onions, cut into crescents
  • 3 peppers, cut into strips
  • 3 zucchini (about 600 grams), cut into thin slices
  • 2 tablespoons olive oil

for rice and pesto:

  • 200 grams of brown basmati rice
  • two handfuls of fresh parsley
  • 85 grams of porridge
  • 3 tablespoons olive oil
  • 1 clove garlic, chopped
  • 400 grams of chickpeas, drained
  • 200 grams of halloumi cheese, cut into cubes

Method of preparation :

Turn the oven to 200 degrees. Put the red onions, peppers and zucchini in a large pan and season with 2 tablespoons of olive oil and spices to taste. Bake the vegetables for 25 minutes or until soft and lightly browned. Add chickpeas and halloumi cheese to the roasted vegetables and cook for another 10 minutes.

Boil the rice following the instructions on the package. Combine parsley, cashews, remaining olive oil, garlic and spices to taste to prepare the parsley pesto.

Serve the rice with the vegetables, chickpeas and halloumi cheese and season with parsley pesto.
