Required products :

  • 800 grams of pumpkin
  • 2 red onions
  • olive oil
  • 1 teaspoon smoked paprika
  • 15 grams of dried mushrooms
  • 300 grams of long grain rice
  • 25 milliliters of brandy
  • 30 grams of parmesan
  • 150 milliliters of cream
  • 30 grams of parsley
  • 10 small gherkins
  • 1 small clove of garlic

Method of preparation :

Preheat oven to 180 degrees.

Peel a squash, grate it and cut it into 2.5 cm cubes. Peel an onion and cut it into large pieces.

Put the pumpkin and onion in a large pan, pour olive oil, sprinkle with smoked pepper, salt and pepper and mix well. Bake for 40 minutes.

Pour hot water over the mushrooms and soak for 10 minutes in a small bowl (the water should cover them). Drain them and save the liquid in which you soaked them, cut the mushrooms.

Put the mushrooms and rice in the pan next to the pumpkin.

Heat the brandy for 20-30 seconds until it heats up, and light it with a long lighter. Pour it over the rice and stir.

Grate the parmesan, mix it with the cream and pour into the pan. Pour 400 milliliters of water and water from soaking mushrooms, stir.

Return the dish to the oven and bake for 25-30 minutes, until the rice is ready.

Cut parsley in bulk, along with pickles. Grate the garlic and combine these products.

Serve the rice with the parsley and cucumber mixture, and pour extra olive oil over each portion.
