Necessary products

  • 300 grams of long grain rice
  • 600 milliliters of hot vegetable or fish broth
  • 1 tablespoon curry paste
  • 100 grams of frozen peas
  • 150 grams of smoked mackerel
  • 3 tablespoons low-fat cream
  • 2 hard-boiled eggs, cut into quarters
  • coriander for sprinkling
 

Method of preparation

Put the rice in a large microwave-safe container. Mix the broth and curry paste, pour them over the rice and stir. Cover the dish and cook in the microwave for 5-6 minutes on high heat.

Cut the mackerel into large pieces and add it to the rice along with the peas and cream. Stir again. Put in the microwave for another 6-7 minutes on medium heat until the rice is ready. Serve with quartered eggs and sprinkle with coriander. Enjoy your meal!
