Heat the grape seed oil and pour in the thinly sliced onion head and stew for 5 minutes. Then add the garlic cloves, cut into slices, fry them for about half a minute.
Cut the celery stalks lengthwise into pieces about a centimeter thick, and turn the carrots into thin straws. Add the vegetables to the onion and garlic, fry everything for 5-7 minutes.
Wash the rice by pouring it into a colander and placing it under running water until it becomes transparent.
Mix the beans and fried vegetables, add the chopped zucchini and chopped chili pepper, which you previously cleaned from the seeds and cut into thin strips or circles.
Fill the products with 200 milliliters of water, add red pepper and salt, increase the temperature of the hob to a minimum. Once the liquid boils, reduce the heat, close the pan tightly with a lid and let the dish cook for 15 minutes.
Wait a quarter of an hour before serving to allow the products to simmer.
Cut the green olives stuffed with red peppers in half and add the halves to the finished dish. Sprinkle with chopped fresh parsley leaves and serve immediately.
