How To Cook Ricotta And Mascarpone Cookies With Almonds And Chocolate Glaze - Recipe

Required products :

  • 2 1/2 teaspoons flour
  • 1 teaspoon baking powder and salt
  • 3 tablespoons unsweetened cocoa
  • 120 grams of soft unsalted butter
  • 1 cup white and brown sugar
  • 2 eggs
  • 220 grams of ricotta and mascarpone
  • 1 1/2 tea cups finely chopped almonds
  • 1 teaspoon finely chopped chocolate for the dough
  • 220 grams of chocolate for the glaze


Method of preparation :

Turn on the oven to preheat to 190 degrees.

In a medium bowl, mix the flour, baking powder, salt and cocoa.

In a large bowl, beat the soft butter with the sugar (both types) with a mixer until you get a fluffy cream (about 3 minutes).

Then add the eggs, ricotta, mascarpone one by one and beat until completely combined and turn into a homogeneous mass. Pour the dry ingredients, a cup of almonds and chopped chocolate into it.

Line two trays with parchment and spread the dough in them, scooping it out with a tablespoon and shaping the cakes.

Place the pans in the oven on two levels at the same time and bake for 15 minutes, changing the places of the dishes in the middle of the baking.

When the edges of the cookies become golden, remove from the oven and leave for 20 minutes to cool in the pans. Then arrange in a plate, tray or other suitable serving dish.

Melt the chocolate for the glaze in a water bath and dip the top of each (already cold) jam in it.

Sprinkle with the remaining almonds and refrigerate to firm the coating.
