Required products :
2 liters of chicken or meat broth
60 milliliters of olive oil
80 grams of finely chopped onion
1 - 2 carrots
500 grams of diced beef fillet (2.5 cm side)
650 grams of rice
250 milliliters of dry red wine (at room temperature)
2 tablespoons butter
salt and freshly ground black pepper
Method of preparation :
Pour the broth into a suitable saucepan, bring to a boil over medium heat and reduce the temperature to a minimum.
Heat olive oil in a separate bowl, add onions, chopped carrots and stew until soft. Then put the meat and let it cook until browned on all sides. Transfer to a bowl and work on the rice.
Pour it into the same pan in which you fried the beef, and cook for 3 minutes, stirring constantly, until each grain absorbs the fat and becomes transparent. Pour the wine and let it prepare, stirring constantly, until all the liquid is absorbed.
Add 1 ladle of the boiling broth, stir and wait for the broth to absorb the rice before pouring the next one.
Leave about 60 milliliters for last.
20 minutes after the rice softens, add the meat. Let everything cook for about 1-2 minutes, stirring occasionally.
Remove from the heat, add the butter and the last broth. Season with salt and pepper to taste and serve immediately.
