How To Cook Risotto With Chicken, Corn, White Wine And Cheese - Recipe

Required products :

  • 1,200 liters of chicken broth
  • 400 grams of chicken fillet
  • 350 grams of arborio rice
  • 200 grams of corn (canned)
  • 200 milliliters of white wine (semi-dry)
  • 100 grams of onions (1 medium-sized head)
  • 100 grams of yellow cheese
  • 30 milliliters of olive oil
  • 1 sweet yellow pepper
  • 1 teaspoon salt (sea)
  • 1/4 teaspoon black pepper (ground)
  • 1/8 teaspoon saffron


Method of preparation :

Fry the chopped old onion in a little olive oil, which should become transparent. Then add the fillet cut into small pieces. Once it turns white, add the pepper (also chopped) and mix the products. Add the saffron a few minutes later.

It's time for the rice, add it to the bowl, add salt and after 2-3 minutes, when the mixture warms up, start pouring a little wine into it, stirring constantly.

Once the beans absorb the alcohol, pour in the chicken broth and season with salt and pepper at the end of cooking.

Serve the risotto hot, sprinkled with yellow cheese and green spices.
