How To Cook Risotto With Meatballs, Tomatoes And Spinach - Recipe

Required products :

  • 4 raw sausages (or flavored minced meat)
  • 250 grams of cherry tomatoes
  • 2 sprigs of rosemary
  • 1 tablespoon olive oil
  • 2 small heads of red onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 350 grams of rice
  • 1 cube vegetable broth dissolved in 1 liter of water
  • 125 grams of spinach
  • 25 grams of butter
  • 50 grams of parmesan

Method of preparation :

Preheat oven to 200 degrees.

Take out the inside of the sausages and form small meatballs from them, which you arrange in a greased pan.

Add cherry tomatoes, season and sprinkle with rosemary. Drizzle with olive oil and bake for 20 minutes, turning the meatballs in the middle of baking.

Meanwhile, heat half a spoon of olive oil in a pan and fry the onion in it for 5 minutes, stirring often. Add the garlic and rice, stir before adding the hot broth in portions - put 1 ladle first, when absorbed, add the next. Pour the liquid ladle by ladle, and cooking the rice should take about 15-18 minutes.

Finally, add the spinach and stir to melt the petals.

Remove the pan from the heat, add the butter, 30 grams of parmesan, tomatoes and stir.

Serve the risotto by putting 4 meatballs in each portion.

Sprinkle with the remaining fragrant parmesan and serve immediately.
