How To Cook Risotto With Mussels, White Wine And Parmesan - Recipe

Required products :

  • 1 teaspoon arborio rice
  • 200-250 grams of frozen mussels
  • 1 / 2-1 head onion
  • clove garlic
  • 2.5-3 tea cups broth (vegetable, chicken, fish)
  • 50 milliliters of dry white wine
  • 2 tablespoons olive oil
  • 30-50 grams of parmesan
  • 1/2 teaspoon dried herbs
  • salt to taste

 

Method of preparation :

Rinse the frozen mussels with cold water and let them thaw at room temperature.

Prepare the broth (you can use chicken, fish or vegetables).

Heat olive oil in a deep bowl with garlic in it. This will flavor the fat.

Then remove the clove and pour into the same bowl the finely chopped onion and let it simmer over medium heat until golden brown.

Add the rice (do not wash it before) and cook until it is soaked in olive oil and acquires a pearly appearance (this will take a few minutes).

Then pour the white wine. When the berries absorb it, start gradually adding the broth (or water). When the rice absorbs one portion of the liquid, pour in the next. It is not necessary to close the container with a lid, the fire should be low and the liquid should simmer slightly.

Finally, add the mussels, the mixture of dry spices or others to your liking.

If you use raw mussels, add them to the rice along with the last portion of broth. In case they are pre-cooked, combine them with the already prepared rice.

Add the grated Parmesan cheese, leaving some of it to sprinkle on the dish before serving.

Season with salt and pepper.

The mussel risotto is ready.
