How To Cook Risotto With Parmesan, Fresh, Wild Garlic And Butter - Recipe

Required products :

2 tablespoons butter
1 tablespoon olive oil
3 heads fresh garlic
2 cloves old garlic
1 small onion
250 grams of rice for risotto
salt and ground black pepper to taste
100 milliliters of white wine
1 liter of chicken or vegetable broth a
handful of wild garlic

30 grams of cold butter
50 grams of grated Parmesan cheese

 

Method of preparation :

Heat the butter and olive oil in a thick-bottomed pan. Stew in the fat finely chopped fresh, old garlic and onion for about 10 minutes. They should not change color. Add the rice and mix well. Add salt and wine. Start adding half a ladle of hot broth, waiting for the liquid to evaporate before pouring the next portion. Do this for 10 minutes, then add the wild garlic, pouring the broth and do not stop stirring. Five minutes later, remove the pan from the heat
and add 30 grams of very cold butter, cut into small pieces, as well as 50 grams of grated Parmesan cheese. The rice should be cooked but firm.
Mix everything with a wooden spoon and you can serve.

If desired, add more parmesan.
