Necessary products:

 

  • 1 onion
  • 2 tablespoons coconut oil
  • 1/4 teaspoon saffron
  • 300 grams of fresh mushrooms
  • 3 cloves garlic
  • 1 and 1/2 teaspoon quinoa
  • 1 teaspoon water
  • 4 teaspoons vegetable broth
  • 1/2 cup chopped fresh parsley
  • 100 milliliters of white wine
  • 1-2 tablespoons ground nuts of your choice
  • salt, pepper

 

Method of preparation:

 

Heat the butter in a saucepan and saute the chopped onion. Add the mushrooms, garlic, quinoa and stir. Pour the water, add the saffron and season with salt and pepper to taste.

Cook over low heat and after the liquid is reduced, add the broth and white wine. Let the risotto simmer until the quinoa is ready.

Sprinkle portions, sprinkle with chopped fresh parsley and ground nuts of your choice. Serve the risotto warm and eat with pleasure.
