How To Cook Risotto With Spinach, White Wine And Parmesan - Recipe

Required products :

  • 250 grams of arborio rice
  • 150 grams of onions
  • 2 cloves fresh garlic
  • 2 leeks (white only)
  • 150 milliliters of white wine
  • 400 milliliters of vegetable broth
  • 800 grams of spinach
  • 150 milliliters of olive oil
  • 1 bunch of fennel (fennel, fennel)
  • 2 lemons
  • black pepper and salt to taste
  • 50 grams of grated Parmesan cheese
  • connection leaves wild chervil


Method of preparation :

Cut the onion into small pieces, the white part of the leek stalks into circles. Mix the two products, add the fresh garlic and stew everything for 2-3 minutes (until soft) over low heat in 3-4 tablespoons of olive oil.

Then add the rice, and 2 minutes later pour the wine and stir until the grains absorb the liquid.

Then gradually pour the broth. First put enough to be a little above the rice. Once the latter absorbs the liquid, add the same amount and continue in the same way until it is exhausted.

Finally, add the spinach and stew until soft. Do not add more broth. If necessary, pour a little (a teaspoon) periodically.

When the rice softens and most of the liquid is absorbed by it, remove the pan from the heat and add the chopped dill.

Finally, sprinkle with Parmesan cheese, season with olive oil and lemon juice, season with pepper and salt.
