How To Cook Risotto With Zucchini, Chicken, Bacon And Mushrooms - Recipe

Required products :

  • 500 grams of sliced ​​chicken legs
  • 2 teaspoons rice
  • 1 zucchini
  • 1 onion
  • 100-150 grams of dried tomatoes
  • 8-10 mushrooms
  • 4 strips of bacon
  • 2 cloves garlic
  • 20 milliliters of oil
  • 2 tea glasses of white wine
  • 5-6 teaspoons chicken broth
  • 1 teaspoon yogurt
  • grated parmesan to taste (for sprinkling before serving)
  • spices to taste (ground black pepper, dried thyme)
  • salt to taste

Method of preparation :

Heat the fat in a pan and fry in it the chopped onion and one clove of garlic. When soft, pour the rice over them and fry the products together until the grains become translucent.

 

Then pour a glass of broth and cook the rice until it absorbs all the liquid. Then add a little more broth, wine and continue to stew the beans, gradually pouring a little broth until they are completely ready.

Meanwhile, in another pan, fry the chicken pieces together with the chopped bacon and the second clove of garlic.

 

When the rice is ready, add the chopped zucchini and mushrooms, season and let the mixture simmer.

 

When the mushrooms and zucchini pieces soften, immediately turn off the heat and pour the fried chicken and bacon, as well as the chopped sun-dried tomatoes, into the pan with the rice.

Put the yogurt, stir (the consistency of the rice should be creamy). If necessary, add extra salt.

 

Spread the finished risotto on a plate, sprinkle with grated Parmesan cheese and serve.
