Required products :

  • 1.5-1.8 kg of beef tongue
  • 2 large heads of old garlic or 3-4 fresh
  • 1-2 teaspoons thyme leaves
  • left
  • melted butter

 

Method of preparation :

Wash the tongue, pour boiling water over it and boil until ready (1.5-2 hours), removing the foam that has formed in the meantime. Then pour cold water over it and strain the broth.

Peel the tongue and crush the garlic together with two large pinches of salt and thyme. Pour a little of the broth or use melted butter.

Stir and separate 2 tablespoons of the resulting sauce.

Using a thin sharp knife, make incisions in the tongue, which you fill with garlic paste. Then spread the sauce on all sides and place the tongue in a suitable pan.

Pour 1 tea cup of the broth and place the dish in the oven turned on at 170-180 degrees.

It takes about an hour for a yellow crust to form on the surface of the tongue. It should remain soft on the inside.
