Required products :

1 whole cleaned chicken (about 1,700 kg)

3 tablespoons vegetable oil

15 peeled chestnuts

2 medium onions

2 cloves garlic

120 milliliters of sherry wine

2 teaspoons dried thyme

1 tablespoon ground coriander

1 bay leaf

salt and ground black pepper to taste

 

Method of preparation :

To peel the chestnuts, first make cross-cuts on their surface, arrange them in a pan and bake in the oven for about 30 minutes. Then you will peel easily.

 

Wash the chicken, dry it and rub inside and out with salt and pepper.

Finely chop the garlic and onion.

 

Heat oil in a suitable pan, put the chestnuts, bay leaf and fry for 7-8 minutes, stirring.

Season with salt and pepper, add onion and garlic. After about 3 minutes, pour the wine and 1 teaspoon of thyme.

 

Let everything cook for about 4 minutes, until the liquid has partially evaporated. Allow the mixture to cool.

Mix the remaining thyme with the coriander.

Carefully pierce your fingers under the skin of the chicken and smear with spices (start with the legs and end with the breast).

 

Fill the chicken with the chestnuts, sew or close with toothpicks. Put it in a baking dish and place in a preheated oven to 220 degrees. Let the dish cook for about 1 hour and 20 minutes (it still depends on your oven), every 15 minutes pour the juice that separates.

When the chicken is cooked, leave for 15 minutes at room temperature, then remove the stuffing and cut the meat into portions.

Serve the chestnut stuffing with onions as a side dish.
