How To Cook Roast Chicken With Lots Of Garlic And White Wine - Recipe

Required products :

  • 1 medium chicken (or preferred parts)
  • 40 unpeeled garlic cloves
  • 1 teaspoon dry white wine
  • 1 carrot
  • 2 stalks of celery
  • 3 - 4 tablespoons olive oil
  • spices and herbs: fresh thyme, rosemary, parsley, salt, pepper and others of your choice and taste

 

Method of preparation :

Cut the chicken into portions, spread with olive oil, season with salt and pepper. Arrange them in a ceramic bowl, at the bottom of which you put a layer of garlic, chopped carrots, herbs and spices. Pour the wine and close the container with a lid. Place in the oven and when the liquid boils, reduce the temperature. Let the dish cook on low heat for about an hour and a half (or until ready).

Then remove the meat to a plate, remove the spices except the garlic. Mash half of it and add to the sauce that has separated during baking and strain the liquid. Put it on the stove until it thickens or add a little flour for this purpose. Season with salt and pepper.

Serve the roasted chicken with the resulting sauce, whole garlic cloves and toast.
