How To Cook Roast Chicken With Mushrooms, Rice And White Wine - Recipe

Required products :

  • 600 grams of chicken fillet
  • salt and pepper
  • olive oil
  • onion head
  • 2 garlic cloves
  • 200 grams of mushrooms
  • 1/4 tea glass of white wine
  • 1 1/3 tea cups chicken broth
  • 1/2 cup cream (can be sour or liquid)
  • 1 teaspoon long grain rice
  • 1 teaspoon Italian spices
  • 1/2 teaspoon unpeeled paprika
  • 2 tablespoons fresh parsley (chopped)

 

Method of preparation :

Turn on the oven to preheat to 180 degrees while you prepare the dish.

Heat over medium or high heat 2 tablespoons of olive oil in a large pan that you can put in the oven.

Cut the chicken into pieces, sprinkle with salt and pepper, then fry until golden in the fat and remove to a plate.

In the same pan, heat another tablespoon of olive oil, reduce the temperature to medium and pour the finely chopped onion. After about three minutes it will become transparent, then add the garlic, 30 seconds later increase the heat and put the chopped mushrooms in the bowl. Let them cook until golden.

When this happens, pour 1/4 of the wine and cook the mixture until the liquid remains 1 tbsp. Then pour the chicken broth and remove the pan from the heat.

Add salt, cream and pour over the raw rice, spices and mix well.

Pour over the chicken and cover with aluminum foil. Bake the dish in the preheated oven for 45 minutes. Then remove the leaves and if the casserole is too liquid, return to the oven for a few more minutes without covering until the excess liquid has evaporated.

Before serving, sprinkle the finished chicken with fresh parsley.
