Required products :

  • 1 whole chicken
  • 4 cloves garlic
  • 1 teaspoon salt
  • 6 tablespoons butter
  • 1 tablespoon fresh thyme (chopped)
  • 2 tablespoons lemon peel
  • 3 tablespoons lemon juice
  • 3/4 teaspoons black pepper
  • 350 grams of potatoes
  • 220 grams of baby carrots
  • 220 grams of Brussels sprouts (halved)

 

Method of preparation :

Rinse the chicken and dry it. Place it chest down on a kitchen board and cut both sides along the spine to be removed.

Turn the chicken over and dissolve it, squeezing it to dissolve well. Transfer the meat to a large pan.

Put the garlic cloves on the kitchen board, salt them and stir with a knife, then saturate them. Combine garlic, butter, thyme, lemon zest and pepper in a bowl. Save 2 tablespoons of the mixture and rub the rest under the skin of the chicken.

Cook the chicken in a preheated 220 degree oven for 10 minutes, then reduce the temperature to 200 degrees. Take out the pan, put the sliced ​​potatoes, halved Brussels sprouts and carrots in it.

Rub 2 tablespoons of butter and garlic into the chicken breast. Return to the oven and bake for another 20 minutes. Make sure the meat is ready (use a thermometer that should show 75 degrees at the thickest part of the meat).

Drizzle with lemon juice and let stand 10 minutes to cool before serving.
