Method of preparation :
First make the sauce.
Heat the butter in a suitable pan and fry the flour in it for a minute, stirring constantly. Then remove from the heat and without stopping stirring, add the milk, pouring it in a thin stream.
Return the pan to the hob and bring the mixture to a boil on low heat. Leave to cook for 2 minutes and then pour in the grated cheddar cheese and mustard.
Season with salt, pepper, mix well, remove from heat and leave the sauce for a while.
Mash the garlic clove, spinach and tomatoes, wash and dry. Clean the spinach from the hard parts, cut the tomatoes into quarters.
In a large skillet, heat a tablespoon of butter, put half of the leaves in it and cook over high heat for two minutes, stirring constantly. Pour the spinach into a sieve and do the same with the rest of the raw.
Mix the two portions and squeeze with your hands to drain the excess liquid.
Heat the rest of the butter, fry the garlic in it for 30 seconds, add the tomatoes, cook for 2 minutes and transfer to a pan together with the separated juice.
Cut the fish into pieces to cover the tomatoes. Spread an even layer of spinach on them and add salt.
Pour the sauce over everything, level the surface, sprinkle with grated cheddar cheese and bake the dish in the oven for half an hour (at 190 degrees).
