How To Cook Roast Lamb Leg With Garlic, Juniper And White Wine Sauce - Recipe

Required products :

3 kg lamb leg
300 milliliters of white wine
3 cloves chopped garlic
leaves of 2 sprigs of rosemary
3 juniper berries
1 teaspoon black peppercorns
1 tablespoon olive oil
to taste

Method of preparation :

Turn on the oven to preheat to 190 degrees.
Mix garlic with rosemary, black peppercorns and juniper, add olive oil and crush to a paste.

Take the lamb out of the fridge and rub it with the aromatic mixture. Leave to stand for about an hour at room temperature. Then place in a pan and place in a preheated oven for 1 hour and 45 minutes. Then remove the meat, cover with foil and leave for 30 minutes. The thigh will turn pale pink inside. If you prefer more baked, let it bake for 2 hours and then put the foil for 30 minutes.

Collect the juice that separates during cooking in a suitable container and add the wine to it. Bring to the boil and simmer for a while. Then strain the sauce and season to taste.

Serve the lamb with it.
