Preheat the oven to 220 degrees (with a fan at 200).
Put the thyme, garlic cloves, olive oil and the rind of 1 lemon in a mortar and crush to make a paste.

Drizzle the meat several times with the liquid from the pan while cooking. Pour a little water into the pan, 15 minutes before the meat is ready.
Remove the meat from the pan and wrap it in foil without pressing too much, leave it for 20 minutes.
Remove the fat from the pan and pour it into the pan. Add 2 tablespoons of flour to it and stir. Pour 500 milliliters of broth (hot) and bring to a boil for 3-4 minutes. Add the mustard and jam. Season with salt and pepper.
Serve the meat with the sauce.
