Boil the meat, cool and set aside. Drain the broth and set aside about 250-300 milliliters of water. Melt the butter in a pan and saute the finely chopped green onions, garlic and mint.
Season with salt, pepper and spread the mixture on the bottom of a pan. Beat the meat with the mint and add it.
Mix the aubergines with the garlic, spread over the lamb and pour the broth with the wine. Preheat oven to 160 degrees and bake for two hours. Serve the dish warm, garnished with fresh rosemary leaves.
