Required products :
pork ribs
rosemary
thyme
sage
For garnish:
red and white beans
pumpkin
garlic
Bay leaf
black peppercorns
For the sauce:
250 milliliters of dark beer
150 grams of tomato puree
lutivka
soy sauce
honey
Apple vinegar
crushed garlic
paprika
determine the quantities of the main products according to your preferences and the desired number of portions, and put spices to make the sauce to taste.
Method of preparation :
Make incisions along the ribs, forming diamonds, as seen in the photo.
Pour the beer into a suitable container and place on the stove.
Let it boil for a few minutes.
Then add the tomato puree, shallots, soy sauce, honey, a little apple cider vinegar, crushed garlic and paprika. Allow the sauce to cook on low heat for about 5 minutes.
Take a suitable baking dish, pour half of the sauce on the bottom, put the ribs and pour the remaining marinade.
Leave to marinate in a cool place for a day.
The next day, boil the two types of beans separately.
When cooking, add bay leaf, black peppercorns and pork skin (maybe without it).
While the beans are cooking (should be cooked until semi-finished), cut the pumpkin into cubes (2 cm), which are lightly fried in lard.
Remove the meat from the dish with the marinade, remove the latter with a spatula and collect in a bowl. Place the ribs on a wire rack.
Wash the dish (or use another), pour into it both types of beans, garlic cloves (1 head), rosemary, thyme, sage. Pour hot water, add salt to taste and place in the oven on the lowest level.
Place the grid with the ribs on the bowl with the beans and herbs.
Let the dish cook for 2 hours. During this time, turn the ribs once and spread the marinade diluted with water.
10 minutes before removing the ribs from the oven, remove the herbs and add the diced fried pumpkin.
Put the beans in a warmed porcelain plate, on them the ribs, pumpkin and decorate with fresh rosemary.
