Required products :

  • 3/4 tea glass of port ruby ​​wine
  • 1/2 cup cherry jam
  • 1 teaspoon fresh thyme, chopped
  • 1 teaspoon garlic powder
  • 1 and 1/4 teaspoons salt
  • 1/2 teaspoon ground black pepper
  • 1 pork loin
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • thyme sprigs (optional)

Method of preparation :

Preheat oven to 220 degrees.

Boil the wine for 10 minutes, add cherry jam, stir and cook for 45 seconds. Remove from the heat and season with fresh thyme.

Combine garlic powder, salt and pepper and season the pork loin with spices. Fry the meat in hot olive oil until brown on all sides.

Transfer to a greased pan and season with butter. Bake for 20 minutes in a preheated oven, then pour the meat with half the cherry sauce and bake for another 5 minutes. Remove from the oven, pour over the remaining sauce and let stand for 10 minutes.

Cut the tender meat into thin slices, garnish with sprigs of thyme if desired and serve.
