Required products :

  • 3 artichokes
  • 2 lemons
  • 4 tablespoons olive oil
  • left
  • 1 small clove of garlic, crushed
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon Worcester sauce
  • 1/4 tea cup grated Parmesan cheese

Method of preparation :

Preheat the oven to 220 degrees and cover the pan with aluminum foil.

Wash the artichoke and dry it with a kitchen towel.

Cut the stem of the artichoke and the tops of all the leaves. Cut the vegetables in half vertically.

Put the artichokes in the prepared pan and squeeze half a lemon on the cut half and rub the edges of the vegetables with the citrus. Sprinkle with salt and pour olive oil. Turn and repeat the procedure - lemon, salt and olive oil.

Leave the artichoke with the cut side down and bake under foil for 35-40 minutes.

Meanwhile, mash the whole head of garlic and salt with 1/4 teaspoon of salt.

Grate the rind of 1 lemon in a bowl and squeeze a little lemon juice. Add the mustard, Worcestershire sauce and 2 tablespoons of olive oil. Mix with garlic, add parmesan.

Serve roasted artichokes with dressing.
