Preheat oven to 190 degrees.
Cut the tops of each beet, peel them and make cross cuts. Place flat side down in a greased baking tray, cover with aluminum foil and bake for 45-50 minutes or until soft.
Increase the oven temperature, remove the foil from the pan, season with olive oil and cook for another 4-5 minutes to lightly bake.
Toast the cumin seeds in a dry pan, stirring constantly for 1-2 minutes.
Combine sour cream (or yogurt), buttermilk, dill, salt and pepper.
Serve the beets on a plate, sprinkle with toasted cumin seeds and garnish with cream sauce.
