How To Cook Roasted Eggplant With Tomato Sauce And Cheese - Recipe

Required products :

  • 1,300 pounds of eggplant
  • 1/2 teaspoon olive oil + 5 more tablespoons
  • 1 onion (finely chopped)
  • 3 cloves garlic (pressed with a garlic press)
  • 1 teaspoon ground dried peppers
  • 30 basil leaves
  • 2 cans of 800 grams of chopped tomatoes
  • 170 grams of grated mozzarella cheese (or yellow cheese)
  • 50 grams of parmesan (grated)
  • salt and pepper

 

Method of preparation :

Cut the eggplant into cubes and distribute it in two large trays covered with baking paper. Drizzle with 2 tablespoons of olive oil. Put the vegetables in the oven to bake at 180 degrees for 45 minutes, changing the places of the dishes in the middle of the time. The eggplant is ready when it turns golden brown. Remove from the oven and leave on.

Meanwhile, in a large deep frying pan (or saucepan), heat 1/2 teaspoon of olive oil. Fry onion in it, seasoned with salt until soft. Add garlic, ground pepper and 5 basil leaves. After a minute, add the tomatoes and stew, stirring occasionally. Allow the sauce to thicken over medium heat for about 45 minutes. Wait for it to cool slightly and mash it, leaving pieces of tomatoes, season with salt. From this amount you should get 6 tea cups of sauce.

Put 1 cup of sauce on the bottom of a baking tray. Add half of the eggplant, the remaining basil leaves and pour 1 tablespoon of olive oil.

Add 2 more cups of sauce, sprinkle half of each type of cheese on top and pour again with 1 tablespoon of olive oil. Add the remaining eggplant, sauce, mozzarella and 1 tablespoon of olive oil.

Bake for 30 minutes, then sprinkle with the remaining Parmesan cheese and cook for another 3 minutes. Allow the dish to cool for at least 10 minutes before serving.
