Required products :
3 medium eggplants
2 tomatoes
200 grams of mozzarella (maybe another type of cheese of your choice)
3 cloves garlic
3 tablespoons mayonnaise
olive oil
salt and pepper
Method of preparation :
Wash the aubergines, cut them into circles and arrange in a tray whose bottom you have covered with parchment. Season with salt and ground black pepper to taste and leave for 10 minutes. Then sprinkle with olive oil and place in an oven preheated to 200 degrees.
Wash the tomatoes, cut them into circles, also arrange in a tray covered with baking paper. Next 10 minutes in the oven (you can put together with eggplant).
Add the crushed garlic cloves to the mayonnaise. Cut the mozzarella into thin circles.
It remains to "assemble" the appetizer.
Take a piece of eggplant, spread it with garlic mayonnaise and put a circle of tomato on it. Next again eggplant, mayonnaise, mozzarella and finish with eggplant.
Put the resulting vegetable "pyramids" in the oven for a few minutes to melt the cheese. Sprinkle a little more mozzarella on top if desired.
