Necessary products:

 

  • 2 eggplants
  • salt, pepper
  • olive oil
  • 2-3 tablespoons corn flour
  • 1/2 teaspoon vinegar
  • 1 head of garlic
  • a few sprigs of fresh parsley

 

Method of preparation:

 

Line a baking tray with a sheet of baking paper. Wash, dry the aubergines and cut them into circles. Add salt and strain the excess water. Season with black pepper and beat in the flour.

Arrange the circles in the pan, sprinkle with olive oil and bake in a preheated 200 degree oven for 10 minutes. Meanwhile, mix the vinegar with the garlic, put them in a blender and beat until smooth.

Remove the aubergines from the oven, spray them with the mixture and return for another 15 minutes. Cool, distribute portions and serve, garnished with extra garlic sour sauce and fresh parsley.
