How To Cook Roasted Mackerel With Tomatoes And Olives - Recipe

Required products :

  • 1 frozen mackerel
  • 2 small tomatoes
  • 2 small onions
  • 40 grams of pitted olives
  • 70 grams of yellow cheese
  • 1/2 bunch fresh parsley
  • juice of 1/2 lemon
  • salt, pepper
  • oil to grease the pan

 

Method of preparation :

Cut the mackerel in half (previously remove the head, entrails and large bones), add salt, sprinkle with black pepper and generously sprinkle with lemon juice.

Peel an onion and cut it into circles or semicircles, saturate parsley. Turn the olives into slices, the tomatoes into small cubes, removing the liquid with the seeds.

Grease a pan with oil, put the fish in it with the skin down, and spread the chopped onion on top.

Tomatoes and olives also put on the fillets, sprinkle with parsley and place in a preheated oven at 180 degrees.

While the fish is cooking, grate the yellow cheese. After 10 minutes from the start of baking, sprinkle with yellow cheese and return to the oven until the coating melts.

Transfer the finished dish to a plate and serve immediately, garnishing with slices of lemon and olives.
