How To Cook Roasted Marinated Chicken With Garlic Rice - Recipe

Required products :

  • 1.2 kilograms of chicken legs

For the marinade :

  • 3 cloves garlic, pressed / or 1 tablespoon garlic powder /
  • 2 teaspoons cumin powder
  • 1 tablespoon paprika
  • 4 tablespoons soy sauce
  • 2 tablespoons lemon juice, freshly squeezed
  • 1 tablespoon olive oil

For garlic rice :

  • 2 tea cups, long grain rice
  • 2 teaspoons chicken broth
  • 1 teaspoon water
  • 4 cloves garlic
  • 1/2 onion, finely chopped
  • 1 tablespoon olive oil
  • 2-4 tablespoons butter
  • salt and pepper to taste

 

Method of preparation :

  • In a small bowl, mix the marinade spices and stir well to mix.
  • Place the chicken legs in an envelope with a closure or in a suitable container and sprinkle with the marinade.
  • Leave it in the refrigerator for at least 3 hours, preferably overnight.
  • Preheat oven to 180 degrees. Spread the chicken in a pan with the skin facing up and sprinkle with the remaining marinade.
  • Bake for 45 minutes or until golden brown.
  • Meanwhile, make the garlic rice by sautéing the garlic and onion in olive oil for about 5 minutes on medium heat.
  • Add the rice and stir until translucent.
  • Pour the broth and water into the pot with the rice and cook for about 15 minutes (or until the liquid evaporates).
  • Remove the pan from the heat and add the oil. Season with salt and pepper to taste. Stir well.
  • Serve the chicken legs with a garnish of garlic rice and lettuce.
