For the caramel sauce:
Method of preparation :
Grind the sugar and rosemary with a food processor for 30 seconds.
Preheat oven to 170 degrees.
Sprinkle the cut side of the peaches with the mixture of rosemary and sugar and a pinch of salt.
Melt the butter in a pan and place the peaches with the flavored side down to caramelize briefly - about 3-5 minutes.
Transfer to the oven directly with the pan and bake for 10 minutes, then turn the peaches, pour them with the oil that is in the pan and bake for another 5 - 10 minutes.
Prepare the caramel sauce - combine the sugar with the corn syrup and 1/4 tea cup of water. Cook over medium heat, stirring once, until sugar is melted. Leave to cook without further stirring until caramel is obtained. If there are sugar crystals on the walls of the dish, push them down with a wet spatula to prevent the sugar from hardening.
After about 7-8 minutes, the sauce is ready and immediately remove from the heat so as not to burn.
Then add the cream and stir quickly and continuously to combine. If the caramel hardens, return it to the hob briefly. Leave for 3-4 minutes and add the vanilla.
Serve the roasted peaches with the caramel syrup.
