Necessary products:

 

  • 500 grams of red peppers
  • a few crushed garlic cloves
  • 1 teaspoon flour
  • salt and pepper
  • olive oil or oil for frying
  • 500 grams of ripe tomatoes
  • a few sprigs of fresh parsley
  • 1 teaspoon paprika
  • vinegar to taste

 

Method of preparation:

 

Bake the peppers in a pepper oven, peel them and roll them in flour. Fry them in hot fat, drain and arrange on a plate. Peel a squash, grate it and squeeze the juice.

Fry them in the same oil and add the garlic, salt and pepper. Cook over low heat until the sauce thickens. Garnish the peppers with the tomato mixture, sprinkle with fresh parsley and serve.
