Wash the peppers, remove the tails, clean the seeds (try not to damage the peppers).
Fry in hot olive oil until golden brown on all sides. Then reduce the heat to a minimum and close the pan with a lid. Stew the peppers for 20 minutes, turning them periodically. They need to soften and lose most of their moisture. When they are "spided" and baked, they are ready for the next "procedures".
Take only the leaves of parsley, peel the garlic
and grind / crush (but not too much) the two spices or chop very finely. Add salt, pepper, vinegar and mix well.
Pour in the liquid left over from frying the peppers.
Put the peppers in a suitable container and pour the resulting garlic sauce. Wait for them to marinate until they cool completely and it's even nice to cool them.
