Required products :

  • 1 medium perch
  • 2 tablespoons orange jam / marmalade
  • 1 tablespoon white wine vinegar
  • 1 tablespoon orange juice
  • 3 sprigs of parsley
  • 1/2 teaspoon ground sweet red pepper
  • olive oil
  • left
  • freshly ground black pepper

 

Method of preparation :

Remove the fish from the freezer and place it in the refrigerator for 10-12 hours to thaw.

In a small bowl, mix the orange jam and juice, pour olive oil, vinegar, add finely chopped parsley stalks, salt and put half of the red pepper. Stir.

 

Divide the fish into two fillets, season with salt and pepper, spread with olive oil and sprinkle with the remaining paprika.

Heat a non-stick pan and roast the perch in it for 2 minutes on each side.

 

Remove to a plate and serve with orange sauce.
