How To Cook Roasted Pumpkin With Grapes And Cheddar Cheese - Recipe

Required products :

  • 1 kg of red grapes without seeds
  • 3 sprigs of thyme + 1 tablespoon fresh leaves
  • 4 tablespoons extra virgin olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 large pumpkin, cut into pieces
  • 100-150 grams of cheddar cheese, grated (Parmesan or yellow cheese)
  • 2 tablespoons roasted pumpkin seeds
  • 2 tablespoons balsamic vinegar
  • maldon salt for garnish (optional)

Method of preparation :

Preheat oven to 230 degrees.

Cover the bottom of two baking trays with parchment paper.

Put the grapes and thyme stalks in one pan and the pumpkin pieces in the other. Season with olive oil, salt and pepper.

Roast the grapes on the top shelf and the pumpkin on the bottom. After 15 minutes, turn the pans and turn the pumpkin pieces. Cook until the grapes are slightly browned (6-10 minutes) and the pumpkin softens and acquires a golden tan (10-15 minutes). Sprinkle the pumpkin with grated cheddar cheese and return to the oven for 5-7 minutes until melted.

Serve the roasted pumpkin and grapes on a plate and garnish with fresh thyme leaves and roasted pumpkin seeds. Season with balsamic vinegar and Maldon salt if desired.
