Squeeze the garlic cloves with a knife and peel them. Wash the tomatoes, cut them into 4 parts, remove the tails. Wash the basil, dry and cut or chop by hand.
Finely chop the garlic. In a large bowl, mix (by hand) the garlic, tomatoes and basil. Add vinegar, olive oil, pepper and salt to taste. Mix everything thoroughly.
Pour the tomatoes with the spices into a pan with a non-stick coating, greased with olive oil. Bake in a preheated 180 degree oven for 15 - 20 minutes.
During this time, grate the cheese and when the tomatoes are ready, sprinkle them with it. Return the dish to the oven for a few more minutes until the cheese is melted.
Serve with fresh bread.
