How To Cook Roasted Vegetables In Tomato Sauce With Garlic - Recipe

Required products :

1 eggplant
1 medium zucchini
2 sweet red peppers
2 medium onions
3 tablespoons olive oil
3-4 cloves garlic
pinch cumin
pinch oregano
pinch ground coriander
2 tablespoons tomato paste
4 medium tomatoes
small bunch parsley
salt and ground black pepper to taste

Method of preparation :

Wash the vegetables. Cut the eggplant and zucchini into circles (of medium thickness) and the peppers into cubes.

Mix in a bowl finely chopped onion and garlic, add olive oil, spices and fry everything for 5 minutes.

Wash the tomatoes, scald them, then peel and grind with a blender. Pour them into the bowl with the stuffing, add the tomato puree. Allow the sauce to simmer for about 5 minutes.

Arrange the vegetables in a pan, alternating zucchini rings with eggplant rings and pieces of peppers (add tomato rings if desired). Drizzle with tomato sauce and season with salt and ground black pepper to taste. Cover the dish with foil and place in the oven. Let the dish bake at a temperature of 200 degrees for about 40 minutes (or until the vegetables soften).

Serve with chopped fresh parsley.
