How To Cook Roasted Vegetables With Parmesan And Thyme - Recipe

Required products (for 5-6 servings) :

  • 2 onions
  • 3-4 young zucchini
  • 2 large tomatoes
  • 1 tablespoon olive oil
  • 1 cup grated Parmesan cheese
  • 2 tablespoons thyme (or amount to taste)
  • salt and pepper

 

Method of preparation :

Peel both onions, rinse with water and cut into slices or semicircles.

Heat olive oil in a pan, pour onion and fry over medium heat until soft (not more than 10 minutes). Stir all the time.

Wash and dry the zucchini, cut off the edges. Choose young vegetables because their skin is thin and the seeds are small, which means that you do not need to peel and clean the core.

Wash the tomatoes as well and cut into thin circles.

Turn on the oven to preheat to 180 degrees.

At the bottom of a suitable pan, distribute the stewed onion, season it with salt and ground black pepper, then arrange the zucchini and tomatoes, alternating them and overlapping the vegetable slices. Sprinkle them with thyme (it is better to use fresh, but dried is also suitable).

 

Sprinkle the products with grated Parmesan cheese and bake in the oven for 40-45 minutes.

 

The coating will melt and turn into an appetizing brownish crust. Serve the vegetable dish immediately after cooking.
