Peel a squash, grate it and cut it into thin strips. Blanch them in boiling salted water for about 1-2 minutes, then rinse with cold and leave to drain the liquid.
Cut the cheese into 8 pieces (or according to the number of strips of vegetables), wrap each in a strip of zucchini and arrange the rolls in a pan greased with fat, not touching each other.
Drizzle with the remaining oil and bake for 5-6 minutes in the oven at 190 degrees.
Make the sauce. Steam the tomatoes, peel them, cut into 4 parts and clean the seeds. Then cut into cubes and stew in oil for about 3 - 5 minutes. Season with salt and pepper to taste, chopped green spices.
Serve the zucchini rolls with the sauce. They are delicious both cold and warm.
