Method of preparation :
Mix the minced meat with the grated onion in a bowl, add the oatmeal or bread crumbs, olive oil, both eggs and parsley. Season to taste and knead until smooth.
Take care of the caramelization of onions.
Peel the heads, cut them and fry until soft (about 5-10 minutes), stirring.
Then reduce the temperature of the hob and pour the brown sugar into the pan. Don't stop confusing. Pour the wine and let everything simmer for about 5 minutes until the alcohol evaporates.
When this happens, pour the broth and sprinkle the onion with a spoonful of flour.
Leave the combination on the fire until it thickens, and be sure to stir constantly.
It's time to make the sauce. To do this, dissolve the starch in a little broth, then mix with the rest. Season with salt and ground black pepper to taste and bring the liquid to a boil. 2-3 minutes later turn off the stove.
It's time to shape the roll.
Spread the minced meat evenly on baking paper. Shape into a rectangle measuring 25/30 cm.
Put 1/2 tea cup of caramelized onion on it,
top 1/2 cup grated mozzarella.
Using paper, roll up a roll, starting on the shorter side. Close the stuffing with the minced meat on all sides.
Put in a suitable form and pour a little of the sauce.
Bake the dish in a preheated 180 degree oven for about an hour.
Once you take the roll out of the oven, pour a little more of the sauce over it.
Spread the remaining caramelized onions on the surface
and grated mozzarella.
Return to the oven until the cheese is browned.
Serve with chopped fresh parsley.
