Required products :

  • 80 grams of buttermilk
  • 60 grams of dark beer
  • 10 grams of honey
  • 170 grams of spelled flour
  • 65 grams of rye flour
  • 90 grams of flaxseed
  • 45 grams of hemp seed
  • 45 grams of sunflower
  • 14 grams of salt
  • 230 grams of rye grains
  • 220 grams of water
  • 150 grams of kvass

Method of preparation :

Soak the rye seeds in water for 12 hours, then drain and rinse.

Add all the ingredients in a large bowl and knead to obtain a homogeneous mixture.

Cover and leave warm - about 35 degrees for 3 hours. During this time, you should notice yeast activity and fermentation. Due to the wholemeal flours, the rise of the dough will not be very large, but there should still be bubbles formed on it. If no activity occurs, keep waiting, up to 5 hours.

Grease a large saucepan with a lid - preferably cast iron for bread.

Form the dough and transfer it to the prepared dish. Leave to rise again at room temperature for another 2 hours.

Cover with a lid and refrigerate for 12-16 hours.

Turn the oven to 220 degrees.

Bake the bread for 55-70 minutes until the center of the bread reaches 100 degrees.

Cool it to room temperature, then wrap it in a towel and cut it after 24 hours.
