How To Cook Sabayon Cream With Champagne And Strawberries - Recipe

Required products :

  • 200 grams of strawberries (you can replace with raspberries or blueberries)
  • juice and peel of half a lemon
  • 4 egg yolks
  • 100 milliliters of sweetened champagne
  • 85 grams of sugar

 

Method of preparation :

Choose only healthy uninjured fruits and cut into 2 or 4 pieces depending on their size. Sprinkle them with lemon juice and sprinkle with 1 teaspoon of sugar.
Stir thoroughly and refrigerate.

In a large saucepan, pour water, which you put on the stove to boil. Put a bowl in it (on a water bath).

Grate the citrus peel finely, pour it into the smaller bowl, add the sugar, yolks and beat with a wire whisk.

When the combination becomes light and increases in volume, start pouring the champagne gradually, without stopping the process.

Distribute the cream in dessert bowls, decorate with strawberry pieces and serve immediately while still warm.
