Cut the eggplant into strips lengthwise and spread them with olive oil on both sides, then grill them to the desired readiness (about 2-3 minutes per side) on a grill pan.
Put them in a serving dish.
Put the garlic and hot pepper in the pan to heat briefly, pour the lemon juice and stir, then pour over the eggplant.
Cut the tomatoes and add them to a plate, add the mozzarella and season.
Finally, add parsley and mint, add the finely grated lemon peel.
Mix all the products and finish with a few basil leaves.
