Learn how to cook "Salad of roasted aubergines and fresh tomatoes with garlic and onions". Delicious recipe.
Required products :
700 grams of eggplant (about 5 medium)
500 grams of peppers (about 4 medium)
50 grams of green pepper
1 head of garlic
500 grams of tomatoes
2 medium onions
small bunch of parsley
oil or olive oil
salt to taste
Method of preparation :
Wash the aubergines and peppers, be sure to pierce them or make small incisions on their surface so that they do not crack during baking. Bake them in the oven together with the garlic head at 140 - 160 degrees for about 30 - 40 minutes. Check their readiness with a wooden stick, bake them until soft, put them in a pan with a lid or a suitable package and let them simmer for 15 minutes.
Before that, scald the tomatoes and peel them. Cut them into cubes and drain the juice.
Peel the aubergines and cut them into cubes.
Peel the peppers, chop them finely.
Peel the garlic and mix all the products in a large bowl. Add the finely chopped onion and parsley. Season the salad with oil or olive oil, add salt to taste, pepper, stir and ... good appetite!
