Do you want something light and filling for dinner, but also full of flavors and colors? This salad is a great choice, very light, but at the same time warm and gives the feeling of complete nutrition, unlike traditional cold salads.

Heat a grill or grill pan over medium heat.
Cut the zucchini into thin slices lengthwise.
Also cut the pepper into 3-4 cm wide pieces, do the same with the halloumi cheese.
In a small bowl, crush the garlic and add olive oil, season with salt and pepper to taste.
Put the asparagus and peppers in a bowl and pour half the olive oil, stirring to taste all the slices of vegetables.
Grill them, transfer the prepared vegetables to a plate and cover with aluminum foil so that they do not cool down.
Season the sliced zucchini with olive oil. Grill for 2-3 minutes on each side and transfer them to a plate.
Grill the cheese for 1-2 minutes on each side until golden.
Roast the pine nuts in a dry pan until lightly browned.
Serve the salad by mixing all the vegetables in a plate and seasoning them with a little lemon juice and sprinkle with the nuts. Arrange the halloumi in the portion and serve with a few slices of lemon.
