Italian salad from Tuscany, rich in aromas. Suitable for garnish or for a nutritious lunch.

Required products :

  • 1 head of cauliflower, cut into flowers
  • 100 milliliters of extra virgin olive oil
  • 250 grams of ciabatta (or bread)
  • 2 red hot peppers, seedless and chopped
  • 4 cloves garlic, chopped
  • 8 fillets of anchovies
  • 35 grams of raisins soaked in water
  • 1 tablespoon capers, rinsed
  • 4 tablespoons parsley, chopped
  • 5 radishes, thinly sliced
  • 1 teaspoon balsamic vinegar (or white wine vinegar)
  • juice of 1/2 or 1 lemon

Method of preparation :

Stew the cauliflower until soft and set aside.

Cut the bread (or ciabatta) into small pieces. Heat 3 tablespoons of olive oil and fry in several batches of bread until golden. Add the hot peppers, garlic and anchovies with 1 tablespoon of olive oil and saute for 2 minutes, being careful not to make the garlic too dark.

Pour the crispy pieces of bread into a bowl and mix with the raisins, capers and parsley.

Fry the cauliflower in hot olive oil until golden. Pour into the bowl with the bread, add the radishes and season with balsamic vinegar, lemon juice and season to taste, stir.

Serve the salad warm.
