How To Cook Salad With Barley, Cucumbers, Chickpeas And Peas - Recipe

Required products :

  • 240 grams of chickpeas (raw)
  • 250 grams of barley
  • 8 teaspoons of water
  • 1/4 tea cup olive oil
  • 1 1/2 teaspoons frozen peas
  • 1 1/2 cups cucumber tea, sliced
  • 1 cup chopped roasted red peppers
  • 3/4 tea cup red onion, finely chopped
  • 1 teaspoon grated lemon peel + lemon juice
  • 2 teaspoons dried dill
  • 1 teaspoon grated cheese

Method of preparation :

Soak chickpeas overnight. The next day, drain and cook until done.

Boil the barley (you can add it to chickpeas in the middle of cooking). Drain and rinse and add 1 tablespoon of olive oil.

Mix olive oil with lemon juice and zest, dill and black pepper. Put the vegetables in the salad and mix with the chickpeas and barley. Stir and pour over the dressing.

Season with salt and sprinkle with grated cheese.
