How To Cook Salad With Chickpeas, Pepperoni And Parmesan - Recipe

Required products :

  • 1 can of 400 grams of chickpeas (drained)
  • 1/3 tea cup finely chopped pepperoni salami
  • 1/2 cup grated Parmesan cheese
  • 1/2 onion, finely chopped
  • 1 chopped garlic clove
  • 1 1/2 teaspoons grated lemon peel
  • 1 1/2 teaspoons olive oil
  • 1 tablespoon wine vinegar
  • salt and pepper to taste
  • fresh spices - parsley, basil, thyme

Method of preparation :

Mix the drained chickpeas with sausage, parmesan, onion and garlic, add the lemon peel.

Stir in olive oil and vinegar, add salt and ground black pepper.

Drizzle with chickpea dressing and try the salad, if necessary, season a little more. Leave to stand for 1 night in the refrigerator.

The next day, just before serving, sprinkle with fresh spices and serve the salad cold or at room temperature.
